Lately in the kitchen…

My recipe Wednesdays will be back next week with a fresh, Summertime recipe. Meanwhile, here are some snapshots of food we have grown or I have prepared at home in the last couple months…

Have you ever made a Cherry Mojito? I highly recommend it!

My brother who lives in New York often gifts me with Mast Brothers Chocolate

I decided to make brownies with the Serrano Peppers bar. (They turned out pretty good)

This was was our newly planted garden four weeks ago

I decided it was high time I grilled some fruit..Grilled peaches anyone???

This is what I did with them. Puff pastry with a lemon goat cheese, grilled peach, raspberry & mint. Try it. Really.

I’m currently obsessed with Turkey Burgers. I also whipped up Romanesco & Broccoli Gratin

Our first two cucumbers from our garden!

Great “One Pan Meal” Baked Salmon with Parmesan cream sauce with roasted Green beans, Corn & Red potatoes

Avocados are already amazing–want to experience MORE AMAZING? Grill them!

A daytime date with my husband included a wonderful Fro-Yo intermission..
Vanilla Milkshake & Thin Mint Chocolate with brownie bites, raspberries & sprinkles!

We’ve been eating a lot of salads lately, so I am trying to keep them interesting.
Tomato, carrot, cucumber from garden, yellow pepper, hard boiled egg, avocado, sunflower seeds, feta, fresh Italian parsley & dill from garden and balsamic vinaigrette.

Some of my herbs out front are Dill, Rosemary, Italian parsley and this wonderful Lemon Thyme..

I used the lemon thyme along with some left-over rotisserie chicken in my first Chicken Pot pies

Here is my girl Cailin, keeping an eye out for our greens in the back.  See how well it’s grown since the earlier photo above?

Green leaf lettuce, Swiss Chard, Spinach and just popping up is Basil, Cilantro and Arugula

I somehow let Summer cruise on through without making a batch of Ice Cream, now I’m trying to make up for it.  Here is my husband’s favorite, Loaded Vanilla Bean.

I make a mean marinated Pork tenderloin, but here is a herb crusted Pork Loin.
First rubbed with cinnamon, cumin and cayenne, a layer of dijon mustard and then topped with onion, ginger, cilantro & bread crumbs.
